Every night, my husband and I get together in the kitchen and pack my son’s breakfast and lunch for daycare. It’s actually really difficult to think of stuff to pack. He needs a breakfast, lunch, and a few healthy snacks. I don’t want to give him just Cheerios and cookies for snacks, so everyday we have little containers where we put snacks in such as avocados, yogurt, and applesauce. We always have some type of fruit. Tomorrow he’s getting pita bread stuffed with melted blueberries and yogurt (breakfast), apple sauce, zucchini and plums. For lunch he’s getting CHICKEN NUGGETS. Homemade chicken nuggets with just three ingredients. Chicken breasts, eggs, and bread crumbs.

The trick is, you HAVE to make sure when you cook the chicken that it doesn’t get too dry. If you overcook the chicken, it will get too dry. This is one of the easiest recipes, ever. EVER. I didn’t even need to cut up the chicken when it was raw. I just put the entire chicken breast in a pot of water and waited for it to cook. Took it out, cut it into some rough big chunks and put it in the blender along with a raw egg. before I put the chicken in the oven to cook, I also drizzled some olive oil. It makes it nice and crispy, but also gives the bread crumbs a nice color to it.
You can even try some yourself (like I did) and make honey mustard sauce. Basically just honey and mustard and just mix it together.
